Ingredients:
- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup finely chopped almonds
- 1/4 cup granulated sugar
- 1 tablespoon cocoa powder
Instructions:
In a large bowl, cream together the softened butter and powdered sugar until light and fluffy
Stir in the vanilla extract
Gradually add the all-purpose flour and salt, mixing until a smooth dough forms
Divide the dough into two equal portions
In one portion, mix in the finely chopped almonds
Wrap both portions in plastic wrap and refrigerate for 30 minutes
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Take out the almond dough from the refrigerator and form small balls about the size of a tablespoon
In a small bowl, mix together the granulated sugar and cocoa powder
Roll each almond dough ball in the cocoa-sugar mixture to coat it entirely
Place the coated balls on the prepared baking sheet, pressing down gently to flatten them slightly
Using a cookie stamp or the back of a fork, press a sand dollar pattern onto each cookie
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
