Ingredients:
- 8 small corn tortillas
- 1 lb flank steak, thinly sliced
- 1 cup fresh cherries, pitted and halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons chipotle peppers in adobo sauce, minced
- 1 lime, juiced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions:
Preheat a grill or grill pan over high heat
Season the sliced flank steak with salt, pepper, and olive oil
Grill the steak for 2-3 minutes per side for medium-rare or to your desired doneness
Remove and let it rest for a few minutes
While the steak is resting, in a bowl, combine the halved cherries, chopped red onion, minced chipotle peppers, cilantro, and lime juice
Mix well and season with salt to taste
Warm the corn tortillas on the grill for about 30 seconds per side
Slice the rested steak into thin strips
To assemble the mini tacos, place a few strips of grilled steak onto each warm tortilla and top with the chipotle cherry salsa
Serve immediately and enjoy!
