Mashed Potato Rings



With this recipe, you can turn plain mashed potatoes into tasty, crispy rings. The mashed potato rings are tasty as a side dish or as a fun starter.

Ingredients:

  • 6 cups mashed potatoes
  • 1 cup grated cheddar cheese
  • 1/2 cup chopped chives
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Oil for frying

Instructions:

Grate cheddar cheese, chop chives, salt, and pepper, and add them to mashed potatoes in a large bowl

Use a cookie cutter or a ring mold to make rings out of the mashed potato mixture

Set out some bread crumbs

In a bowl, beat the eggs and then coat each ring of mashed potatoes with breadcrumbs

Set a pan on medium heat and add the oil

This should take about three to four minutes per side

Fry the mashed potato rings until both sides are golden brown and crispy

Take it out of the pan and let it drain on paper towels

Enjoy while hot!

Sugar-Free Homemade Jam



Making jam at home without added sugar is a healthier and simpler alternative. Chia seeds help thicken the jam naturally and provide added nutrients.

Ingredients:

  • 4 cups of fresh berries strawberries, raspberries, or blueberries work well
  • 1/4 cup of chia seeds
  • 1/4 cup of water
  • 1 tablespoon of lemon juice
  • 1 teaspoon of vanilla extract

Instructions:

If necessary, wash and chop the fresh berries

Put the berries, water, and lemon juice in a saucepan

Stirring occasionally, cook the mixture over medium heat until the berries begin to break down and release their juices, about 10 minutes

After taking the saucepan off the burner, allow it to cool slightly

Add the vanilla extract and chia seeds and stir

Blend thoroughly

Pour the jam mixture into a lidded glass jar

To help the jam thicken, place it in the refrigerator for at least two hours

Savor your homemade sugar-free jam with yogurt or toast, or use it as a garnish for sweets!

Classic Waffles



For a great breakfast or brunch, try these classic waffles. The outside is crunchy, and the inside is soft.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

Preheat your waffle iron according to the manufacturer's instructions

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt

In a separate bowl, beat the eggs, and then add the milk, melted butter, and vanilla extract

Mix well

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; it's okay if there are a few lumps

Lightly grease the waffle iron with non-stick cooking spray or a small amount of melted butter

Pour enough batter into the preheated waffle iron to cover the waffle grid the amount will vary depending on your waffle iron's size

Close the waffle iron and cook according to the manufacturer's instructions, usually for 4-5 minutes or until the waffles are golden brown and crisp

Carefully remove the waffles and serve immediately with your favorite toppings like maple syrup, fresh fruit, or whipped cream

Spiced Pear Chutney



Warming spices and ripe pears combine to create a delightful condiment that perfectly embodies winter. This chutney is excellent as a spread on sandwiches or as a match for cheese and roasted meats. This is a wonderful way to use winter's seasonal pears.

Ingredients:

  • 6 cups of ripe pears, peeled, cored, and chopped
  • 1 cup of granulated sugar
  • 1 cup of apple cider vinegar
  • 1/2 cup of raisins
  • 1/2 cup of chopped onion
  • 1/4 cup of crystallized ginger, finely chopped
  • 1 cinnamon stick
  • 1/2 teaspoon of ground cloves
  • 1/2 teaspoon of ground allspice
  • 1/2 teaspoon of salt

Instructions:

In a large saucepan, combine the pears, sugar, apple cider vinegar, raisins, chopped onion, crystallized ginger, and the cinnamon stick

Place the saucepan over medium-high heat and bring the mixture to a boil

Reduce the heat to low and simmer, uncovered, for about 45-50 minutes, stirring occasionally until the mixture thickens and the pears become tender

Stir in the ground cloves, ground allspice, and salt, and continue to simmer for an additional 5 minutes to allow the flavors to meld

Remove the cinnamon stick and discard it

Pour the spiced pear chutney into clean, sterilized jars while it's still hot

Seal the jars tightly

Allow the chutney to cool to room temperature before storing it in the refrigerator

The spiced pear chutney can be enjoyed immediately but will taste even better after a few days of maturing

It can be stored in the refrigerator for up to 2 months

Fresh Guacamole



With this easy recipe, you can make the freshest guacamole at home. You can change how spicy it is by adding more or less jalapeo peppers. The lime juice gives it a zesty kick.

Ingredients:

  • 3 ripe avocados
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1-2 cloves garlic, minced
  • 1-2 jalapeo peppers, seeded and minced optional for heat
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

Cut the avocados in half, remove the pits, and scoop the flesh into a bowl

Mash the avocados with a fork or potato masher until desired consistency is reached

Stir in the red onion, cilantro, minced garlic, and minced jalapeo peppers if using

Squeeze the lime juice over the mixture and stir to combine

Season with salt and pepper to taste

Serve immediately with tortilla chips or as a topping for tacos, nachos, or your favorite Mexican dishes

Chewy Molasses Cookies



Enjoy these chewy molasses cookies that are vegan. They're great for baking during the holidays or whenever you want a sweet and spicy cookie.

Ingredients:

  • 1/2 cup vegan butter, softened
  • 1/2 cup organic brown sugar
  • 1/4 cup unsweetened applesauce
  • 1/3 cup molasses
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar for rolling

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet

Butter and brown sugar should be mixed together in a big bowl until they are light and fluffy

Add the applesauce and molasses and mix them in well

Mix the flour, baking soda, ginger, cinnamon, cloves, and salt in a different bowl using a whisk

Slowly add the dry ingredients to the wet ones and mix them together until they are just combined

Use a cookie scoop or spoon to make 1-inch balls out of the dough

Cover each ball with granulated sugar by rolling it in it

Place the coated balls about 2 inches apart on the baking sheet that has been prepared

Put the cookies in the oven for 10 to 12 minutes, or until the tops are cracked but the middles are still soft

Let the cookies cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way

Donut



These homemade donuts are easy to make and taste delicious. Perfect for breakfast or as a sweet treat anytime!

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • Vegetable oil for frying
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • Sprinkles optional

Instructions:

Combine flour, baking powder, salt, ground cinnamon, and granulated sugar in a mixing bowl

Beat the eggs in a separate bowl and stir in the milk, melted butter, and vanilla extract

Blend thoroughly

Mixing until just combined, pour the wet ingredients into the dry ingredients

Avoid over-mixing

In a deep fryer, heat the vegetable oil to 350F 175C

Portion the doughnut batter into the heated oil by spoonfuls, and cook for two to three minutes on each side, or until golden brown

Take care not to pack the pan too full

Using a slotted spoon, remove the donuts from the oil and place on paper towels to drain

To make the glaze, combine the powdered sugar, milk, and vanilla extract in a small bowl

Allowing any excess glaze to fall off, dip each donut into the glaze

Sprinkles are an additional option at this point if you'd like

Before serving, let the glaze settle for a few minutes
