Pepperjack Potatoes



These Pepperjack Potatoes are a delicious twist on classic stuffed potatoes, featuring creamy mashed potatoes mixed with spicy pepperjack cheese and tangy sour cream.

Ingredients:

  • 4 large potatoes, washed and scrubbed
  • 1 cup shredded pepperjack cheese
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Get the oven ready by heating it up to 400F 200C

Use a fork to make several holes in the potatoes

Add salt and rub the potatoes with olive oil

Put the potatoes on a baking sheet and bake them until they are soft, about 45 to 60 minutes

Take the potatoes out of the oven and let them cool down a bit

Along the length of the potato, cut it in half and scoop out the flesh, leaving a thin layer inside the skins

Mash the potato flesh with sour cream, pepperjack cheese shreds, green onions chopped up, salt, and pepper in a bowl

Fill the skins of the potatoes with the mashed potato mix

Put the stuffed potatoes back on the baking sheet and bake for another 10 to 15 minutes, or until the cheese melts and starts to bubble

If you want, you can add more chopped green onions as a garnish

Serve hot
